Healthy Summer Recipes

Are you looking for some healthy summer recipes to make for your next family BBQ? Here are two of my favorites that seem to be a hit with a crowd, are healthy but still are packed with TONS of flavor! Bon Appetit!


Lump Crab with Mango Avocado Salsa

Ingredients

  • 3/4 C Lump Crab Meat

  • 2 teaspoons olive oil

  • 2 teaspoons chili powder

  • salt to taste

  • 1 cup diced mango

  • 1 cup diced avocado

  • 1/4 C red onion, diced

  • the juice of 1 lime

  • 1/2 cup minced red bell pepper

  • 1/4 cup chopped cilantro

Instructions

  • In bowl, combine olive oil, chili powder, salt, pepper and crab meat. Mix

  • combine the mango, avocado, red bell pepper onion and cilantro in a bowl. Stir in the lime juice and salt to taste.

  • Mix salsa with crab meat mixture and serve.


Cole Slaw


Ingredients

  • 3/4 cup mayonnaise (can substitute dairy free Mayo)

  • 3 TBP apple cider vinegar

  • ¼ cup granulated sugar(can substitute monk fruit sweetener)

  • 1 TBP mustard

  • ¼ tsp salt

  • 2 bags (14 oz each) shredded cole slaw mix


Instructions

  • In a large mixing bowl, whisk together the mayo, vinegar, sugar, mustard, and salt until smooth.

  • Add in shredded cole slaw mix and fold over with spatula until completely coated. Cover and refrigerate 1-2 hours, or overnight.

  • Serve and enjoy!
